Creamy lemon in colour, with lifted heady aromas of lemon zest, crunchy apples, and layers of white flowers and jasmine, carried by a gentle brewers’ yeast and soft pastry lift. The palate is frothy and alive with lemon citrus, crunchy white grapefruit, white peach, and preserved pear, wrapped around a steely, dry mineral edge. A touch of wild ferment adds savoury texture and a lively raw-edged pulse across the palate. Dry, zippy and chalky with a quietly rustic feel and a long citrus and apple finish. At 11.5%, it is light and breezy - perfect straight from the cool box. If you want extra yeasty creaminess, carefully roll the bottle to reawaken the sleeping yeasty depths of flavour.
