A spritely nose of sweet lemon rind and crunchy young peach, layered with green apple and a marine minerality reminiscent of oyster shell and crushed stone. Bone dry, medium-bodied, with a soft yet precise mouthfeel, driven by taut, saline acidity. Fruit is delineated rather than opulent, crisp apple and pear core, underpinned by chalky, sea-spray energy. A drop of melon and pear skin emerges mid-palate. Brisk and saline on the finish, with fine tension carrying citrus peel acidity and a lick of sea air through the aftertaste.

A textbook Chablis in 2023. Restraint over ripeness, cool-climate linearity, and Kimmeridgian limestone minerality. Built for oysters!
